    Why can't I just use standard beer brewing equipment?

    While some beer equipment overlaps, kombucha has unique needs. Beer brewhouses are designed to extract sugars from grain (mashing/lautering), which is unnecessary for tea. Furthermore, the extreme acidity of kombucha requires rigorous passivation of the stainless steel, and standard beer fermenters lack the wide access needed to safely remove a 50lb SCOBY.
