Tank Selection and Sizing Guide

  • Why Choose a 60-Degree Conical Fermenter?

For commercial brewing, a 60-degree conical fermenter is the industry standard. This specific angle allows yeast to naturally slide down to the bottom cone after fermentation. Brewers can easily harvest this healthy yeast from the bottom valve for re-pitching into the next batch, saving significant ingredient costs. Additionally, removing the trub from the cone clarifies the beer before it transfers to the bright tank. ZR Brew manufactures all unitanks with an optimized 60-degree cone to maximize yeast vitality and simplify the clarification process.

  • How to Calculate Headspace in a Beer Fermenter?

When sizing a commercial beer fermenter, total volume must exceed effective volume to accommodate krausen (foam) during active fermentation. The industry best practice is to calculate a minimum of 20% to 25% headspace above the working volume. For example, a 1000L effective volume fermenter should have a total volume of at least 1200L to 1250L. Insufficient headspace can lead to blow-off issues and product loss. ZR Brew engineers calculate precise headspace requirements based on your specific beer styles and original gravity targets.

  • Do You Need a Bright Beer Tank (Brite Tank)?

While unitanks can carbonate beer, dedicated bright beer tanks (brite tanks) significantly improve brewery throughput. By transferring fermented beer to a brite tank for clarification and carbonation, you immediately free up the fermenter for a new batch. Brite tanks feature dished bottoms rather than cones, maximizing the volume of clear beer available for packaging. They are essential for breweries using automated canning or kegging lines, ensuring consistent carbonation levels and reducing turnaround time. ZR Brew brite tanks feature high-efficiency carbonation stones for rapid CO2 saturation.
