Unlike vertical fermentation vessels, the horizontal sake tank is orientated along the floor plane rather than upward, making it the preferred solution for facilities with low ceiling heights, basement production rooms, or buildings with structural height restrictions. The Φ1160 × 2200mm horizontal footprint provides a stable, accessible tank profile without requiring overhead clearance beyond the tank diameter.
Gentle Sedimentation and Lees Management — Process Advantage for Sake
The horizontal tank geometry supports natural sedimentation of sake lees (kasu) along the bottom of the vessel under gravity, facilitating cleaner draw-off of clarified sake from the upper liquid layer without disturbing the settled solids. This configuration reduces the need for mechanical separation steps and supports the gentle handling requirements of traditional and artisanal sake conditioning.
Glycol Jacket with Dimpled Plate — Stable Long-Duration Temperature Control
The dimpled glycol jacket covering the cylindrical body and end sections provides uniform coolant distribution for consistent temperature control throughout extended sake conditioning periods. Combined with 80mm polyurethane insulation, the system minimizes thermal fluctuation between glycol cycles, maintaining the cold conditioning temperatures required for sake clarity development and flavor stability.
30psi Rated Dual-Layer Pressure Safety — Inert Gas and Light Pressurization Ready
The interior is rated to 0.2 Mpa (30psi) working pressure with a 0.3 Mpa (45psi) design ceiling. This allows the horizontal tank to support inert gas (nitrogen or CO₂) blanketing for product protection during storage and transfer, as well as light pressurization for assisted transfer without pump aeration. Redundant pressure relief is provided by a top-mounted safety valve and a PVRV rated at 2 bar on the CIP arm.
CIP-Ready Sanitary Interior — Effective Cleaning in Horizontal Position
The TC-connected CIP arm is fitted with a 360° rotating spray ball, providing full internal surface coverage even in the horizontal orientation where cleaning fluid distribution must overcome gravity differently than in vertical tanks. The interior is polished to 0.2–0.4 μm without dead corners, supporting thorough CIP cycle completion with standard brewery cleaning solutions between production batches.
