SUS304 Sanitary Interior — Food-Grade Compliance for Sake Production
The interior is constructed from food-grade SUS304 stainless steel, fully polished to a 0.2–0.4 μm surface finish without dead corners. This eliminates residue accumulation risk and meets the strict hygienic requirements of sake fermentation, where product contamination must be rigorously controlled throughout the fermentation and storage cycle.
Glycol Cooling Jacket with Dimpled Plate — Precise Temperature Management
The dimpled glycol jacket covers both the cylindrical side wall and the conical base, maximizing coolant contact surface area for rapid and uniform temperature reduction. This design is particularly beneficial for sake production, which requires careful, stable low-temperature fermentation over extended periods to develop the desired flavor profile.
30psi Rated Pressure System with Redundant Safety Valves
Both the interior (0.2 Mpa / 30psi working) and jacket are rated for commercial pressure requirements. A top-mounted safety valve and a mechanical PVRV rated at 2 bar on the CIP arm provide dual-layer pressure relief, supporting safe inert gas blanketing or light pressurization processes commonly used in sake conditioning and storage.
CIP-Ready 360° Spray Ball — Thorough In-Place Cleaning
The TC-connected CIP arm with a full 360° coverage rotating spray ball ensures complete internal surface cleaning without disassembly. Combined with the mirror-smooth polished interior, CIP cycles can be completed efficiently between batches, reducing cleaning downtime and maintaining consistent hygiene standards for multi-batch sake production.
Flexible Head and Manhole Configuration
Dished and conical head options allow the tank to be configured for different fermentation and storage workflows. The pressure side manhole door provides direct internal access for inspection or manual cleaning when required, while the tri-clamp discharge arm with butterfly valve enables controlled and hygienic product transfer at each stage.
Customizable Volume, Finish, and Connection Layout
ZR BREW manufactures this vessel series from 120L to 6,000L+ total volume, with custom dimensions, polished interior finishes (2B standard, 8K mirror optional), and flexible pipe connection layouts available on request. This allows sake producers to specify tanks that integrate precisely with their existing facility layout and production process requirements.
